The custom, handmade handle is crafted by Anthony in our shop using ten carefully layered pieces of micarta and G10 to create our beloved Mexican Blanket pattern. The layered construction technique results in a handle that’s not only visually striking but also incredibly durable and tough. Each piece is made by hand with attention to detail, giving it a one-of-a-kind look and feel that stands out in both performance and style.

The Ahi is an 10” fillet & breaking knife that's perfect for the boat, the butcher shop, and the BBQ. It is .110” thick at the spine with distal taper & thin behind the edge. Since corrosion-resistance can be extremely important in a fillet knife, we offer the Ahi with the option of Cerakote blade coating to make it extremely resistant to rust. This knife is an excellent choice for most butchery work. This knife is designed to ‘break’ through skin, cartilage and small bones. The razor sharp blade trims through fat and easily portions out larger cuts of meat. Designed and made in the USA!
