The Hamachi is an 8” fillet knife with medium-stiff flex; .100” thick at the spine with distal taper & very thin behind the edge. Since corrosion-resistance is extremely important in a fillet knife, we offer the Hamachi in two steel options, both of which are extremely resistant to rust: the uncoated versions are CPM MagnaCut stainless & the coated blades are AEB-L stainless, both at 61 HRC.
