Our 7" Bunka model is inspired by the legendary cutlery of Japan, featuring a thin, hard, high-performance blade and our full-tang interpretation of the classic 'Wa' handle that features simple, straight lines and a slight taper from back to front. The blade steel is AEB-L Swedish stainless heat-treated to 61 Rockwell hardness with cryogenic treatment.
Blade specs: 2.0” high at the heel, 0.10” thick with a full distal taper to the tip, and 0.010” thin behind the edge.
Best steel I’ve ever owned. Blade showed up extremely sharp and the handle feels fantastic in my hand. The craftsmanship is excellent and meticulous. Would definitely recommend for any home or pro chef!
