We designed El Choppo for our friends who love to chop up carne and pollo asada, but it's also great as a general-purpose chef knife. All that surface area is excellent for scooping up your meat and veggies after chopping and slicing. El Choppo is made from AEB-L stainless steel heat treated to 61 HRC, which gives it a long-lasting, razor-sharp edge that is also extremely tough.  El Choppo features a 7.5" cutting edge, 3" height & .125" thickness at the spine which gives it some weight to get through your food with ease. The custom, handmade handle is crafted here in our shop from real abalone shell under a layer of clear acrylic.

El Choppo makes a perfect kitchen companion when paired with our chef knife or bunka.
