The blade is made from AEB-L Swedish stainless steel, heat-treated and cryogenically treated to 61 HRC for exceptional sharpness, edge retention, and durability. With a 0.10-inch spine thickness, 2.0-inch height at the heel, full distal taper, and 0.010-inch thin edge geometry, The Bunka delivers effortless, precise cuts across a wide range of kitchen tasks.
Best steel I’ve ever owned. Blade showed up extremely sharp and the handle feels fantastic in my hand. The craftsmanship is excellent and meticulous. Would definitely recommend for any home or pro chef!
