Our 8.5" Chef model is inspired by the legendary cutlery of Japan, featuring a thin, hard, high-performance blade and our full-tang interpretation of the classic Japanese 'Wa' handle that features simple, straight lines and a slight taper from back to front. The blade is made from AEB-L Swedish stainless steel, heat-treated to 61 Rockwell hardness w/ cryogenic treatment.
Blade specs: 2” high at the heel, .10” thick with a full distal taper to the tip, and 0.010” thin behind the edge.
